Our Châteauneuf-du-Pape Le Couchant cuvée, composed of a blend of 60% Grenache and 40% Mourvèdre, is a parcel selection chosen for its unique terroir: soil, age of vines, exposure.
The vineyards of Le Couchant, as their name suggests, face due west, towards the setting sun. They therefore benefit from optimal sun exposure, both summer and winter.
Located in the Cabrières area, at the very north of the Châteauneuf-du-Pape appellation, the vines with an average age of 50 years rest on very sandy soils, mixed with pebbles and gravel, which define the style of this wine.
At harvest time, the grapes are fully destemmed and then received by gravity to preserve the integrity of the fruit. Maceration lasts approximately four weeks in concrete vats, with gentle extraction.
The aging process continues for 24 months, in large casks, demi-muids and concrete vats.
On the nose, it is intense and delicate: fresh red fruits, spices, pepper, coriander, flint, and light smoky notes. The palate is generous, fresh, never heavy, but dense and perfectly balanced. The finish returns to the spices with a lovely length.
Ideal with veal chop or aged cheeses. Aging potential: 15 years or more.
